Who doesn't like stuffed vegetables? They are an excellent alternative to classic first courses , versatile and perfect to be customized as desired. This variation of quinoa stuffed tomatoes are perfect for those on a gluten-free diet. To prepare them, as always , very few ingredients are enough.
Quinoa, although counted among the gluten-free cereals, actually belongs to the same family as spinach which is the other ingredient in the recipe. The combination will provide your body with a boost of iron and protein , also perfect for those who follow a vegan / vegetarian diet.
How to make Quinoa Stuffed Tomatoes
- First, dedicate yourself to preparing the quinoa . Put it in a fine mesh sieve and rinse it under running water to remove the bitter taste. Transfer it to a pan and cover it with double its volume of water. Salt lightly and cook for absorption without ever stirring.
- Meanwhile, put the spinach in the pan after washing them. Cover and let them dry without adding more water: the residual water from the washing will be enough. Once tender, squeeze them and chop them with a knife. In the same pan, heat a spoonful of oil with a clove of garlic and sauté the spinach, seasoning with salt.
- Wash the tomatoes , cut the cap and remove the internal part with a spoon or corer. Mix the quinoa with the spinach and the grated cheese and stuff the tomatoes.
- Complete with a slice of stringy Galbanino cheese and bake at 180°C for 30 minutes . Serve the stuffed tomatoes in the oven after letting them cool.
