Delicious tomatoes stuffed with quinoa and spinach

Who doesn't like stuffed vegetables? They are an excellent alternative to classic first courses , versatile and perfect for customizing as you like. This variation of quinoa-stuffed tomatoes is perfect for those who follow a gluten-free diet. To prepare them as always, very few ingredients are needed.
Quinoa, although counted among gluten-free cereals, actually belongs to the same family as spinach which is the other ingredient in the recipe. The combination will provide your body with a boost of iron and proteins , also perfect for those who follow a vegan/vegetarian diet.
How to prepare quinoa stuffed tomatoes
- First, dedicate yourself to preparing the quinoa . Place it in a fine mesh strainer and rinse it under running water to remove the bitter taste. Transfer it to a pan and cover it with double its volume of water. Lightly salt and cook until absorbed without ever stirring.
- In the meantime, put the spinach in the pan after washing it. Cover and let them dry without adding more water: the residual water from washing will be enough. Once tender, squeeze them and chop them with a knife. Always heat a spoonful of oil with a clove of garlic in the same pan and sauté the spinach, adding salt to taste.
- Wash the tomatoes , cut the cap and remove the internal part with a spoon or a corer. Mix the quinoa with the spinach and grated cheese and stuff the tomatoes.
- Complete with a slice of stringy Galbanino cheese and bake at 180°C for 30 minutes . Serve the baked stuffed tomatoes after letting them cool.
