Mexican-style vegan tacos are tasty and easy to make, perfect for an aperitif with friends or a different dinner than usual.

Tacos are corn tortillas that are folded on themselves and stuffed with different types of ingredients, a traditional Mexican recipe that lends itself to many variations! Today we will use avocado and chickpeas as the main ingredients to fill them, and we will garnish our tacos with corn, parsley, tomato and a homemade soy yogurt sauce.

Preparation of vegan tacos with avocado and chickpeas

  1. To prepare your tacos, start working all the ingredients one by one: clean the avocado, removing the internal stone and peel, and cut it into cubes. Also cut the fresh parsley and the tomato, which you can leave in slices or dice.
  2. When all the ingredients are ready, prepare the quick soy yogurt sauce : in a bowl, vigorously mix the yogurt with a drizzle of extra virgin olive oil, salt, pepper, lemon juice and a teaspoon of mustard. Also add a handful of chopped fresh parsley, paprika and chilli pepper and mix the ingredients well.
  3. When everything is ready, heat the tortillas in a pan for a few minutes on each side, then fill them with the avocado, corn, tomatoes, parsley and pre-cooked chickpeas drained of their preservation liquid. Season with black sesame , a drizzle of raw oil, salt and your soy yogurt sauce. Enjoy your meal!

The filled and plated tacos should be eaten immediately while they are still hot. However, you can store the tortillas separately, not yet cooked, in the refrigerator for about 4 days . As for the filling, we recommend storing it for a maximum of 1 day in the refrigerator in a container with an airtight lid. Then pay close attention to the avocado, this fruit oxidizes very quickly once opened and cut. We do not recommend freezing.
