How to make homemade diet desserts?
It seems impossible, yet it takes very little to bring light and quick desserts to the table. The trick is knowing which ingredients increase your calorie intake and reduce or replace them with others that perform the same function.
- Fats, for example, are among those that make calories skyrocket, but by consulting the nutritional values ​​of oil and butter, it turns out that they are not so different. This is because there are "good fats" and bad ones. The first category includes extra virgin olive oil but also avocado, a perfect substitute for butter.
- Sugar is also among the offending foods and, although from a nutritional point of view little changes between wholemeal cane and semolina, preferring the former is certainly a healthier choice. Green light, however, to its substitutes which in some desserts can also be ripe fruit purees, apple juice or sweeteners , such as stevia and erythritol.
In general we can say that making the classic desserts we are used to in a light key is possible, while keeping the final flavor of the dish unchanged. The trick is to gradually accustom our palate to less sweet sweets, pardon the pun, and also to "different" sweets such as those obtained using dehydrated fruit or some of the sugar substitutes mentioned above.
However, there is always one basic principle: that of following a varied and balanced diet , accompanied by healthy physical activity. This will be enough to reduce feelings of guilt and appreciate a slice of cake without thinking too much about calories.
1. Cocoa water cake
Chocolate water cake is one of the light and quick desserts you can prepare when you are in desperate need of sugar . You don't even need to go out shopping to prepare it: what you need is probably already in your pantry (unfortunately or fortunately?).
Ingredients for 8 people:
- 200 g of 00 flour
- 20 g of unsweetened cocoa powder
- 150 g of cane sugar
- 250 g of water
- 50 ml of seed oil
- 1 sachet of yeast
Work the water and sugar with an electric mixer until the sugar has dissolved. Then add the oil and any flavorings (orange, lemon, vanilla or cinnamon zest). Incorporate the sifted flour with the baking powder and the bitter cocoa and once you have obtained a homogeneous mixture, pour it into a 24-26 cm pan lined with parchment paper. Bake the cake at 180°C for 40 minutes or until the toothpick test tells you it's cooked. Serve it once it has completely cooled down.
2. Cookies without butter and eggs
Who decided that biscuits without butter and eggs have to be flavorless? A grated lemon zest or the addition of vanilla is enough to perfume the dough and make this dietetic dessert the perfect recipe for your breakfast .
Ingredients for 8 people:
- 300 g of 00 flour
- 70 g of sugar
- 70 ml of seed oil
- 100ml of milk
- 10 g of baking powder
- 1 organic lemon
Combine the flour, sugar, baking powder and grated lemon zest in a bowl. Then slowly add the milk and oil, mixing first with a spoon and then by hand. Roll out the dough between two sheets of parchment paper until it reaches half a centimeter thick, then cut out the biscuits with molds. Place them well spaced on a baking sheet lined with parchment paper and cook at 180°C for 15 minutes . Let them cool on a rack before serving.
3. Light tart
The tart is the dessert par excellence but let's say that it is not among the first light dessert recipes to come to mind, thanks to the presence of butter and jam. The solution could be to prepare the light tart , perfect for all occasions.
Ingredients for 8 people:
- 300 g of wholemeal flour
- 100 g of seed oil
- 100 g of brown sugar
- 1 egg
- 1 yolk
- 1 teaspoon baking powder
- 1 teaspoon of vanilla extract
- 1 pinch of salt
- 250 g of sugar-free jam
Combine the flour, sugar, salt and baking powder in a bowl and form a fountain. Break the eggs in the center and start kneading with a fork, adding the oil slowly. Finish kneading quickly by hand and once you have obtained a loaf , roll it out between two sheets of parchment paper until it reaches half a centimeter thick. Transfer it into a 24 cm tart mold, remove the excess edges and prick the bottom with the prongs of a fork. Pour the jam and create decorations with the remaining dough before cooking at 170°C for 30 minutes . Serve it only when it has completely cooled down.
4. Sugar-free jam
Excellent both to prepare the previous recipe and to be enjoyed at breakfast , the sugar-free jam is perfect if you are looking for diet dessert recipes. The secret to making it so tasty is to use ripe and seasonal fruit . Here's how we do it!
Ingredients for 8 people:
- 1 kg of ripe fruit
- 2 apples
- 1 glass of water
- 1 lemon
Cut the fruit into chunks and put it in a saucepan with the lemon juice. Cover and leave to macerate for an hour then put everything on the fire together with the glass of water. Cook the jam over medium heat for about 45 minutes , testing the saucer to see if it's ready. The choice is yours whether to blend everything to make it homogeneous before placing it inside the sterilized jars. Close them with a new cap, turn them upside down and, once cold, check that the vacuum has formed before placing them in the pantry.
5. Light pancakes
There's no better way to start the day than with a tower of light pancakes . Prepared without eggs or milk , they are excellent to serve with just a drizzle of honey and fresh fruit: do not exceed with the sauce or they will no longer be able to boast of being light!
Ingredients for 3 people:
- 200 g of 00 flour
- 75 g of sugar
- 250 g of water
- 1 tablespoon of seed oil
- 1 teaspoon baking powder for vanilla desserts
- Salt to taste
Prepare the batter by placing the flour, sugar and baking powder in a bowl. Slowly pour in the water and mix with a whisk to remove all lumps. Heat a frying pan and oil it before dropping well-spaced ladles of batter into it. As soon as bubbles form on the surface, turn them over and continue cooking on the other side as well. Serve them on top of each other completing with a drizzle of honey .
6. Diet cake
Speaking of light dessert recipes, could a diet cake be missing? After all, there's nothing better than a soft and fragrant slice of cake to appease our need for sugar and so here's the recipe that we'll unleash when necessary!
Ingredients for 8 people:
- 230 g of type 0 flour
- 280 g of 0 fat Greek yogurt
- 25 drops of sweetener
- 40 g of sunflower oil
- 1 sachet of baking powder
- 1 organic lemon
Mix the yoghurt, the sweetener and the seed oil in a bowl, then flavor with the grated lemon zest. Add the sifted flour with the baking powder and mix until you get a smooth, lump-free dough. Pour it into a 20-22 cm diameter pan lined with parchment paper and cook at 180°C for 35-40 minutes . Let it cool completely before serving.
7. Chia pudding
Among the homemade dietary desserts there is also chia pudding , a sort of 100% natural and vegetable pudding, with very little sugar and also perfect for breakfast. The recipe is really unusual because it uses the gelling power of chia seeds, but we guarantee it's really delicious.
Ingredients for 4 people:
- 360 ml of coconut milk
- 65 g of chia seeds
- 100 g of raspberries
- 15ml maple syrup
Combine the coconut milk, chia seeds and maple syrup in a bowl or jug. Mix well then distribute into four bowls and place in the refrigerator for 4-6 hours . When ready to serve, top with berries and enjoy.
8. Creamy yogurt cups
These dietetic sweets are also suitable both to be enjoyed at breakfast , as a snack or at the end of a meal . In fact, the creamy yogurt cups are simple but really tasty thanks to the berry sauce. Let's see together how to prepare them.
Ingredients for 4 people:
- 450 g of Greek yogurt
- 125 g of blackberries
- 125 g of blueberries
- 20 g of sugar
- 50ml of water
- 1 lime
First prepare the sauce by cooking blackberries and blueberries in a saucepan with water and sugar. You will have to obtain a sort of puree which will then be passed in a colander to remove the seeds. Flavor the yoghurt with the lemon zest then compose the dessert by placing a little yoghurt on the bottom of four cups, cover with the sauce and then with more yoghurt. Make a total of 3 layers per ingredient . Put everything back in the refrigerator until it's time to serve it.
9. Blancmange
Although it is a traditional Italian recipe , blancmange can be considered to all intents and purposes one of the best and most famous dietary desserts. Prepared with almond milk, sugar and corn starch , it has a slight hint of cinnamon which makes it really special.
Ingredients for 4 people:
- 500ml of almond milk
- 50 g of corn starch
- 100 g of sugar
- Grated zest of a lemon
- 1 teaspoon cinnamon powder
Pour the almond milk into a saucepan, keeping a glass aside, and add the sugar, cinnamon and grated lemon zest. Heat it slightly then add the milk kept aside in which you have dissolved the starch. Let it cook until it has thickened then transfer it into a pudding mold or into four single-serving cups. Let it harden in the refrigerator for 4-6 hours then turn it upside down on a plate before serving.
10. Dukan ice cream
Let's use a Dukan diet recipe to prepare a dietary dessert that you will surely appreciate, Dukan ice cream . Creamy and easy to prepare even without an ice cream maker, it is excellent to combine with a classic fruit salad .
Ingredients for 4 people:
- 250 ml of skimmed milk
- 4 tablespoons of sweetener
- 2 yolks
- Lemon peel
- 1 egg white
Work the very fresh egg yolks with half the sweetener then beat the egg white until stiff with the remaining one. First add the milk to the yolks, then the grated lemon zest and lastly the egg white. Mix without disassembling the compound then transfer it into a container and place it in the freezer for 3 hours . Mix , put it back in the freezer for another 3 hours and just before serving , blend it with a food processor to make it creamy.
