  1. First, boil the potatoes in their skins in plenty of salted water until they can be easily pierced with a fork.
  2. Once drained and left to cool slightly, peel them and use a potato masher to obtain a puree.
  3. In a bowl, mix the egg yolks, melted butter and parmesan.
  4. Add the potatoes and mix everything carefully, also adding salt and pepper.
  5. While you let the mixture cool , place the baking paper on a baking tray.
  6. Meanwhile, heat the air fryer to 200°C.
