Today we wanted to put it to the test with a recipe that usually requires a certain amount of attention to prepare: risotto . Specifically, we made a pumpkin risotto with the Thermomix and we must say that, this time too, our expectations were not disappointed.

Putting all the ingredients in the bowl and letting him take care of everything is truly the best. In the meantime, you can dedicate yourself to something else or simply rest. The rice with pumpkin with the Thermomix will be ready in about 30 minutes and, once cooked, the only thing you will have to wash is the bowl. How to prepare the pumpkin risotto recipe with the Thermomix

  1. Place the onion and 3/4 of the diced pumpkin in the bowl: blend for 15 seconds. speed 5.
  2. Using a spatula, combine all the ingredients at the bottom and blend again for 15 seconds. speed 5.
  3. Add the oil and brown for 3 minutes. 100°C speed 1.
  4. Pour in the water and stock cube and heat for 4 minutes. 100°C speed 1.
  5. Add the rice , the remaining pumpkin cut into cubes and cook for 13-15 minutes. 100°C speed 1 Counterclockwise (for rice cooking times, refer to what is stated on the label or rely on your experience).
  6. Stir in the butter and a generous amount of parmesan for 1 minute. speed Soft Counterclockwise.
  7. Distribute on plates and, if desired, complete with another sprinkling of parmesan .

If you want, you can make the risotto richer by creaming it with a cheese such as taleggio or gorgonzola instead of butter. 60 g will be enough to give your dish a further leap in quality. Even preparing saffron risotto has never been easier thanks to the Thermomix.

Conservation

It would be better to eat the risotto as soon as it is made, however, if you have leftovers, you can keep it for 2-3 days in the refrigerator well covered in cling film and reheat it in a pan or in the microwave before consuming it.
