Eggless carrot cake
Eggless carrot cake with orange flavor is an ideal dessert for breakfast or as a snack. Here are all the steps to make it happen.
Today we are preparing an eggless carrot cake in a soft and fragrant version. In fact, we will flavor the dough of our dessert without eggs and butter with orange juice and zest and we will glaze everything with a homemade icing . Clearly this step is completely optional: your cake will still be excellent.
Eggless carrot cake is perfect for all those who follow a vegan diet , but also for those who want to enjoy a light dessert but at the same time rich in flavour. Try making it at home (even with the Thermomix): the result will surprise you!
Ingredients
For the carrot cake
- Carrots – 280 g
- Sugar – 140 g
- Seed oil – 100 ml
- Water – 50 ml
- Flour 00 – 200 g
- Starch – 50 g
- Orange juice – 120 ml
- Orange – 1
- Baking powder – 1 sachet
- Salt – 1 pinch
For the icing
- Powdered sugar – 120 g
- Orange juice – 2 tablespoons
Preparation
How to prepare egg-free carrot cake recipe
Start by peeling the carrots and cutting off the ends. Cut them into pieces and blend them until they are almost puree.
Wash the orange well and remove the zest with a fine grater. It is essential to use an organic product. Then squeeze the juice and filter it.
Add the orange juice and water to the carrots and blend again until you obtain a sort of cream. Transfer it to a bowl large enough to also incorporate the oil , mixing well.
Sift the flour , starch and yeast and add them to the mixture, mixing with a whisk. Finally, flavor with orange zest and add a pinch of salt which will enhance the sweetness of the cake.
Transfer the dough into a 20-22 cm diameter springform pan lined with baking paper or oiled and floured. Cook at 180°C for 40-45 minutes , testing with a toothpick before removing from the oven. Once the dessert is ready, take it out of the oven and let it cool before transferring it to a serving plate.
In the meantime, prepare the icing by mixing the icing sugar with the orange juice (or water). You should obtain a consistency without lumps and not too dense. Use it to cover the dessert.

How to make eggless carrot cake with the Thermomix
If you want to speed up your recipe, you can also prepare the carrot cake with the Thermomix: the process is very simple .
- Place the sugar and clean carrots in the bowl and run the machine for 20 seconds. speed 6.
- At this point, add all the other ingredients and let it cook for 3 minutes. speed 4.
- Pour the mixture into the 22cm diameter cake tin and bake in the oven at 180°C for 40-45 minutes. Your vegan carrot cake is ready to enjoy. The choice is yours whether to also prepare the icing or enjoy it simply with a sprinkling of icing sugar.

Conservation
This cake will keep for about 2-3 days in a cool, dry place, away from heat sources. Without the icing you can also store it for 4-5 days , preferably under a glass bell jar specifically for desserts. We do not recommend freezing in the freezer.
