Let's find out how the chiacchiere are prepared without eggs and butter, fried and also suitable for those who follow a vegan diet.

There is no Carnival dessert more widespread and appreciated than chiacchiere. Called by different names depending on the area, they are essentially sheets of pasta rolled very thin and then fried . Their dough is rather neutral and lends itself to different variations. We want to offer you egg-free chiacchiere, also perfect for those who follow a vegan diet .

The process is really simple and, once you have obtained a smooth dough, you proceed with spreading and cutting. The chiacchiere must be fried to obtain the characteristic bubbles and we advise you, at least on the occasion of this celebration before Lent, to indulge in this delicacy.

Preparation

How to prepare the recipe for chiacchiere without eggs

To make egg-free chiacchiere you can proceed either by hand or with a planetary mixer. First place the sifted flour in a bowl. Add a pinch of baking powder and sugar and mix quickly.

Make a well in the center and pour in the wine , seed oil and water . Before starting to mix, also add the grated lemon zest and a pinch of salt .

Start kneading first with a fork then by hand, transferring the mixture onto the pastry board. Once you have obtained a homogeneous dough, wrap it in cling film and leave it to rest in the refrigerator for 30 minutes .

Roll out the dough with a rolling pin or pasta machine until it is very thin (maximum 2 mm ). Use a serrated pasta wheel to shape your chiacchiere.

Heat the seed oil in a pan until it reaches 170°C-180°C and start frying the chiacchiere, dipping them in a few at a time to prevent the temperature from dropping too much. Drain them with a slotted spoon when they are golden on both sides and very crisp.

Pass them on absorbent paper and, once cold, serve them with plenty of icing sugar .

Variants

We flavored the chatter with lemon zest but you can also use orange zest, vanilla or a mixture of the flavorings you prefer. Furthermore, instead of water, you can use grappa or limoncello . The baking powder is completely optional and can be replaced with bicarbonate of soda . In all cases, together with sparkling wine, it will help you get swollen and bubbly chatter.

Conservation

Eggless chatter will keep for 3-4 days in a paper bag.
