Pan-fried aubergines and peppers take less than half an hour to prepare but be careful not to lose sight of them: they must be stirred quite often to prevent them from sticking. How to prepare the aubergine and pepper recipe

  1. First, wash the vegetables and clean them. The aubergines will have their ends removed while the peppers will have their stems, seeds and white filaments removed.
  2. Then proceed with the cutting: our advice is to choose the same size for both vegetables so that the cooking times are similar. We cut everything into one centimeter cubes .
  3. In a pan, heat the oil with the garlic clove, then add the vegetables, a pinch of salt, a grind of pepper and start cooking. It will take approximately 20 minutes before they are tender. Finally, add some fresh basil chopped with your hands.

The baked variant of vegetable caponata

This recipe can also be cooked in the oven . To prepare baked aubergines and peppers, cut the vegetables and combine them in a bowl together with the oil and finely chopped garlic. Flavor with basil, spread everything on a baking tray lined with baking paper and cook at 180°C for 25-30 minutes . If you want, you can also add 2 diced potatoes and thus obtain an excellent side dish of aubergines, peppers and baked potatoes. The cooking times approximately remain unchanged but make sure the potatoes are cooked before taking them out of the oven.

Eggplant and peppers can be stored in the refrigerator for 2-3 days in an airtight container. We recommend heating them in a pan or in the microwave before consuming them.
