Vegan aubergines in carriage are the egg-free and cheese-free variant of the classic delicious appetizer: a perfect idea for using one of the typical vegetables of the summer season . These delicious aubergine-based sandwiches have a vegan cheese filling and for the breading the eggs are replaced by a natural gelatine based on water and chia seeds.

Preparation of breaded and fried aubergines
- Soak the chia seeds in a little water and let them sit for a couple of hours so that they absorb the water and take on a gelatinous consistency.
- Wash the aubergine and cut it into thick slices of about 1 cm .
- Now let's see how to bread the aubergines: dip a slice in the flour, then in the gel of water and chia seeds and finally in the breadcrumbs.
- Place the slices of vegan cheese on top and, in the same way, bread another slice which you will place on the cheese.
- Continue in this way until you run out of ingredients.
- Fry the breaded aubergine slices in hot oil on both sides until they are nice and golden and crispy. Lift with a slotted spoon, drain the oil well and dry the breaded and fried round aubergines on a tray lined with absorbent paper.

The aubergines in carriage are delicious, tasty and crunchy immediately as soon as they are made . For this reason we do not recommend storing them in the refrigerator, they will inevitably lose their perfect consistency. If you really can't finish them, you can leave them in the fridge for a maximum of 1 day in a container with an airtight lid. We do not recommend freezing.
