Eggplant meatballs in the air fryer
Quick and easy, here's how to prepare delicious aubergine meatballs in the air fryer.
Air fryer aubergine meatballs are a really practical and quick recipe to prepare for any occasion . You can serve them for lunch as a second course or even choose to present them at an aperitif. It is a genuine and very nutritious product, because the main ingredient is aubergine.
Vegetables, typical of the warmer months, mix with other common and genuine ingredients to create a soft and delicious dough. This, then, must be covered with a breadcrumb coating which, with air cooking , becomes irresistibly crunchy .
Preparing the recipe for eggplant meatballs in the air fryer
- First, wash and dry the aubergines, then cut them in half and remove the ends.
- Brush the inside halves with a little oil and place in the air fryer.
- Cook at 200°C for about 15 minutes . Then, move them onto a plate to cool.
- Using a spoon, remove the vegetable pulp and place it in a large bowl; here, mash it to puree it .
- Add a pinch of salt and the chopped parsley.
- Mix and also add the eggs and grated cheese.
- Work to mix all the ingredients well.
- At this point, pour the breadcrumbs into a bowl.
- Take a little dough at a time and shape it to form a ball, pass it in breadcrumbs and press to make the breading adhere well .
- As they are ready, place them in the air fryer basket and spray them with a little EVO oil.
- Cook at 180°C for 12-15 minutes.
