Eggs in a pan with seared cherry tomatoes, the second course ready in 10 minutes


Scrambled eggs and cherry tomatoes

Pan-fried eggs with seared cherry tomatoes are a quick, tasty and very versatile solution.

A colorful and tasty dish, pan-fried eggs with seared cherry tomatoes are simple to make and, accompanied by a good crust of bread, will satisfy even the hungriest .

This is a simple recipe to make, all in the same pan, to serve a second course freshly made, hot, delicious and also excellent for filling a sandwich for a packed lunch or a trip out of town.

Preparing eggs in a pan with seared cherry tomatoes

  1. Cut four slices of bread and toast them lightly, set them aside.
  2. Wash and dry the eggs carefully, then break them and place them in a bowl, add a pinch of salt and freshly ground black pepper and beat them well with a fork.
  3. Wash the red cherry tomatoes which must be well ripe and of the cherry or Pachino type , cut them on one side leaving them whole.
  4. Place the finely chopped onion and a little extra virgin olive oil in the pan, when the onion is cooked, raise the heat and throw in the cherry tomatoes only to scald them slightly, then after 2 minutes at most , remove the tomatoes from the pan and place them in a bowl.
  5. Grease the same pan and as soon as the extra virgin olive oil is hot, add the eggs, turning them to obtain soft scrambled eggs , just a few minutes are enough, just enough time for them to thicken.
  6. Now prepare four dishes , distribute the boiling eggs on top and as soon as they are cooked, do the same thing with the blanched cherry tomatoes.
  7. Accompany the dish with a large slice of toasted bread, pour a drizzle of extra virgin olive oil on each slice and a pinch of pepper. Bring this second course of pan-fried eggs with seared cherry tomatoes to the table immediately and enjoy your meal!

Conservation

We recommend eating this easy vegetarian second course at the moment, however you can also store it for a maximum of 1 day in the fridge , inside a container with a lid. We do not recommend freezing in the freezer.
