Fake cauliflower pizza, perfect for those who pay attention to their figure

With just a few ingredients you can make a gluten-free cauliflower pizza and fill it just like a pizza.

Giving up pizza is an impossible task, especially when you are on a diet. It is the comfort food par excellence, the essential treat on our Saturday evenings. But if you really have to reduce your calorie (and carbohydrate) intake then we recommend you try the cauliflower pizza. This winter vegetable , with its neutral flavour, lends itself very well to making a tasty but flourless pizza base.

In fact, for the fake light pizza you will only need cauliflower , an egg and parmesan . For the seasoning, however, you are free to use whatever you prefer, from the classic margherita to the tastier versions with olives, capers or other grilled vegetables. How to make cauliflower pizza recipe

  1. Start by depriving the cauliflower of the leaves and the hard central core. Then wash it well under running water and cut it into chunks.
  2. Transfer it to a food processor and blend until you get a fairly smooth, rice-like mixture.
  3. At this point add a generous pinch of salt, a grind of pepper, the egg whites, a generous grating of nutmeg, the parmesan and mix well with your hands.
  4. Line a 24-26 cm diameter baking tray with baking paper and spread the mixture, pressing well with your hands. Cook at 180°C ventilated mode for about 15-20 minutes.
  5. While the pizza base is in the oven, cut the mozzarella and let it drain well.
  6. In a saucepan, add a drizzle of extra virgin olive oil, the puree, the garlic clove, salt and a handful of oregano and cook over a very low heat until the pizza is ready.
  7. Complete the light cauliflower pizza with the sauce, mozzarella and, if desired, more oregano, then put it back in the oven for another 5 minutes . You can season it however you prefer, let your imagination carry you away.
  8. Once ready, take it out of the oven, add a drizzle of oil and serve hot or at room temperature.

Conservation

The cauliflower pizza will keep in the refrigerator for a couple of days . We recommend heating it in a pan or in the microwave before consuming it.
