Father’s Day cake

Here is the cake for Father's Day, a no-bake dessert covered with a very simple icing and decorated with chocolate mustaches!
Saint Joseph's Day is celebrated on March 19th . It's a perfect moment to spend with the family, everyone gathered around the table, putting aside the frenzy at least for a few hours. But there is no respectable celebration without a dessert and that is why we want to reveal to you how to prepare the most beautiful Father's Day cake you have ever seen .
This no-bake cake , finished with a coffee-flavored mirror glaze, is perfect for making the dad of the family feel important. Despite the appearance, it is a simple cake obtained from a sort of cheesecake which is then iced and decorated . You will discover that frosting the cake is easier than you imagine and you will have a lot of fun creating two beautiful mustaches to decorate the Father's Day cake.

Preparation

To prepare this cold cake, start from the base. Blend the biscuits until they become powdered using a food processor or placing them in a food bag and beating them with a rolling pin.
Transfer them to a bowl and add the melted butter , mixing well.
Pour them onto the bottom of an 18cm diameter springform pan whose base is lined to size with a sheet of baking paper. Press well with the back of a teaspoon to obtain a uniform thickness. Transfer it to the refrigerator for an hour .
In the meantime, soak the isinglass in cold water for 10 minutes.
Melt the dark chocolate in a bain-marie, then pour it into a bowl. Bring the milk with the sugar to the boil, then add the squeezed gelatine .
Pour everything onto the chocolate three times, stirring constantly and bring it to a temperature of around 35°C (since it is similar to body temperature, you can measure it by hand, simply by touching the cream).
Semi-whip the cream and add it to the previous mixture, mixing delicately from bottom to top with a spatula.
Pour the mixture onto the now cold biscuit base and make sure the surface is smooth. Transfer the dessert to the refrigerator for at least 4 hours . The longer it stays, the better. Once it has completely cooled, remove it from the mold and place it on a rack.
Prepare the coffee icing by mixing the icing sugar and espresso until you obtain a fluid cream. Adjust the amount of coffee so as to obtain an icing that is not too thick. Pour it onto the very cold cake, letting it drip along the edges, covering the cake entirely.
Put it back in the fridge and work on your mustache . Draw them on a sheet of baking paper then turn it over so that they can be seen through. Coarsely chop the dark chocolate with a knife and melt half in a bain-marie, then turn off the heat and add the remaining chocolate, stirring until it has melted.
Transfer it to a pen for decorating desserts or to a cone of baking paper, draw the outline of the mustache and then fill the center. Transfer to the refrigerator to firm up. Once hardened, gently remove the whiskers and place them on the cake.
If you don't feel like making a chocolate mustache, you can follow different paths: you can draw them with whipped cream, using a pastry bag, or create a writing, using melted chocolate. In all cases, the important thing is to make the dessert with love: that, even before its goodness, will make dad happy.

Conservation
The cake must be kept in the refrigerator for a maximum of 2-3 days . We advise you to cover it with a cake cloche to prevent it from absorbing other odors from the refrigerator.
