Fried lamb chops

Among the perfect recipes for Easter there are fried lamb chops with a delicious and crunchy double breading.

With Easter upon us there are many recipes to experiment with to bring a truly amazing menu to the table. Among these it is impossible not to think of fried lamb chops, perhaps one of the most classic preparations of these days. Preparing fried lamb is quite simple and you only need a few ingredients. What not everyone knows, however, is that it takes very little to overcook the meat and make this delicious recipe inedible.

We prepared the breaded and fried lamb chops proceeding with a double breading . In this way the meat will remain more tender and the external crust even crispier. However, we advise you to taste the freshly made breaded lamb chops: only in this way will you be able to fully appreciate them.

Ingredients

For the fried lamb chops

  • Lamb chops – 8
  • Eggs – 2
  • Breadcrumbs – to taste
  • Grated Parmesan – 30 g
  • Fine salt – to taste
  • Pepper – to taste

For frying

  • Seed oil – to taste

Preparation

If you have a whole rack available, first, using a meat knife, cut out the chops. Then clean the bone thoroughly with a smaller knife, such as a paring knife.

Separately, beat the eggs on a plate together with a pinch of salt , freshly ground pepper and grated parmesan. Dip the chops first in the egg and then in the breadcrumbs , placed in a deep dish. Then repeat the operation to obtain double breading.

Heat about a finger of seed oil in a pan and once hot (the ideal temperature is 170°C) fry the lamb cutlets for 2-3 minutes on each side, turning them halfway through cooking.

Drain them and pass them on absorbent paper before serving, adding a pinch of salt to taste.

Adding parmesan to the breading is optional but recommended. If you want, you can also flavor the bread with chopped aromatic herbs – rosemary or parsley are the most suitable – or with grated lemon zest. Finally, to ensure that the breading sticks to the meat even better, coat the ribs first in the flour and then in the egg and breadcrumbs, just as you can see in this video recipe .

If you love tasty recipes but need to keep calories down, you can cook the breaded cutlets in the oven at 180°C for 15-20 minutes by simply placing them on a baking tray lined with baking paper. Otherwise, try the baked lamb chops , equally tasty and perfect for the Easter menu.
