How to prepare the fried pumpkin recipe
- First, cut the pumpkin into slices of the same thickness and remove the peel. The ideal would be to stick to a centimeter of thickness so as to speed up cooking. Alternatively you can cut it into sticks, just like chips.
- In a bowl, beat the eggs with a pinch of salt and combine the breadcrumbs and chopped rosemary on a plate (you can omit it if you don't like it or add other aromatic herbs such as thyme and sage).

Cut the pumpkin into half a centimeter slices then cut it into sticks . Blanch it for 2 minutes in boiling salted water, then drain and dry it. Heat plenty of seed oil and fry the pumpkin by immersion until it is crispy. Drain it and pass it on absorbent paper before serving.
Conservation
We recommend consuming freshly fried pumpkin because, like all fried foods, it is at its best when hot. You can at most store it at room temperature for a day before consuming it.
