Typical dish of the Trieste tradition, here's how to prepare potatoes in the pan, delicious and very tasty!

A very popular side dish in Friuli Venezia Giulia and in particular in the city of Trieste, potatoes in tecia are very simple to prepare and were originally cooked in an iron pan which according to tradition never had to be washed but simply cleaned with kitchen paper. Originally this was precisely the trick that guaranteed the success of the dish and above all the crunchy and golden crust.

The original recipe for potatoes in the pan includes lard , onion and bacon but if you want you can replace the first with oil or butter or with lard. The process is really simple and once you taste it you will no longer be able to do without it.

How to prepare the recipe for baked potatoes

First wash the potatoes well then boil them in lightly salted boiling water until they are soft. It will take approximately 30 minutes . Once cooked, drain the potatoes, peel them and let them cool.

Then peel the onion and slice it finely. Also cut the bacon into cubes or strips.

In a large pan, melt the lard (or butter) and brown the onion and bacon together for a few minutes.

Only when the onion is well browned, add the cold potatoes , cut into cubes. Season with salt and pepper according to your taste, pour in the meat broth and cook over medium heat until a nice crunchy crust has formed.

Some people usually prepare pan-fried potatoes without bacon, as seen in this video . The procedure is the same except that you will obtain a tasty recipe that is also perfect for those who follow a vegetarian diet.

Conservation
