The secret to obtaining it is to use a combination of flour and starch rather than just the first and then work the eggs well. In fact, the recipe includes five, so it's easy to understand how they play an important role. The scent of the dessert is that of citrus fruits , of which we will use the zest, so make sure you buy organic ones.

Ingredients

For the Giuditta cake

  • Flour 00 – 180 g
  • Starch – 120 g
  • Eggs – 5
  • Sugar – 170 g
  • Yogurt – 125 g
  • Organic Lemon – 1
  • Organic Orange – 1
  • Seed oil – 80 g
  • Yeast – 1 sachet
  • Powdered sugar – to taste

How to prepare the Giuditta cake recipe

Break the eggs into a bowl, add the sugar and whip with an electric whisk until it triples in volume. You should obtain a clear mixture.

Then add the seed oil , still with the whisk in action, and the yogurt . You can use either a white one or a citrus one to make the final flavor of the dessert stronger. Flavor with the grated zest of the lemon and orange and finally add the sifted flour , starch and yeast .

Pour the dough into a baking pan lined with baking paper or oiled and floured, approximately 26 cm in diameter. Then cook at 180°C for 40 minutes , testing with a toothpick before taking out of the oven. If inserted in the center of the cake it must come out completely dry. If not, continue cooking for 5 minutes and repeat the test.

Once cold, remove it from the mold and serve, decorating with a sprinkling of icing sugar.

Conservation

The Giuditta yoghurt cake can be kept under a baking tray for 4-5 days , as soft as freshly baked.

Curiosity

There is another recipe for Giuditta cake and it is the one prepared for Pesach , the Jewish Easter. Unlike the Christian one, this lasts for 7 days and does not celebrate the resurrection of Jesus but the escape from slavery in Egypt .

The recipe in question does not include yeast or flour, indeed during this holiday it is even forbidden not only to consume, but also to have any chametz (leavened) food at home. In fact, the bread made to prepare for the escape was unleavened , i.e. unleavened, which became a symbol of rebirth, as opposed to leavened bread attributable to the "old life".

There are several recipes for this variant, all without yeast or gluten. Some are prepared with starch only, others with almond flour. Often the dough is enriched with melted chocolate. In short, there is no single way to prepare it.
