One of the simplest quick desserts to prepare is gluten and lactose free plum cake. A recipe based on few ingredients but capable of giving a unique taste experience.
Although it is one of the quick and easy recipes, it turns out to be just the right amount of softness, fragrant and rich in flavour. Perfect for both breakfast and a snack but also suitable as an end to a meal together with one delicious cream.

Preparation of the gluten and lactose free plum cake recipe
- Take a large bowl and pour the eggs and sugar into it.
- Using an electric whisk, mix the two ingredients until you obtain a light and fluffy mixture.
- Slowly add the oil and milk and mix so as not to deflate what you obtained before.
- Always very calmly add the sifted rice flour and the yeast, incorporating them little by little into the dough.
- Take a 28 cm plumcake mold and flour it with rice flour, pouring the mixture inside.
- Bake in a preheated oven at 180°C for about 40 minutes . It is preferable to always do the toothpick test to make sure the cooking has taken place.
- Let the plumcake cool and add the icing sugar.

Simple but delicious variations for gluten- and lactose-free plum cake
Starting from the same base of ingredients it is possible to create similar desserts but with a different flavour.
For example, you can get a gluten-free yogurt plum cake. To do this, just follow the recipe above, replacing the milk with lactose-free yogurt or, if desired, with soy yogurt . The plum cake will be even softer.
Another option is gluten-free and lactose-free apple plum cake. Also in this case you can always start from the same recipe by adding two sliced apples on the surface of the dessert. Alternatively, to give the plumcake even more flavour, you can add 1 blended apple to the mixture. In this case the cooking could undergo some variations: leave the cake in the oven for around 45-50 minutes and then proceed with the toothpick test.
storage
The gluten- and lactose-free plum cake can be stored in the refrigerator as long as it is well covered or inside a plastic container. This way it can last up to 5 days . A small exception should be made for the variant with apples: in this case the dessert can last 2 or 3 days as the apples often release moisture which in the long run can harm the dessert.
