Gluten-free chatter
Gluten-free chiacchiere are a simple and delicious carnival dessert, prepared in a version also suitable for celiacs.
What would Carnival be without chatter? These sweets typical of the period, but good all year round, are widespread with many different names, which vary from region to region: you can call them lies, fiocchetti, cioffe, strufoli, frappe and also with many different names, but in any case the calls are always good!
In today's recipe we are going to prepare a delicious variant: gluten-free chiacchiere. Try it yourself and follow our preparation made up of a few steps . If you have the Thermomix, even better: it will be even easier. This dessert will cheer up the Carnival celebrations for you and your guests. The most important aspect is the choice of flour: in order to be able to roll out the dough very thinly, you need a mix of gluten-free pasta flours . Yeast is also useful to make them swell during cooking and make them crumbly like traditional ones.
Ingredients
For gluten-free chatter
- Gluten-free pasta flour mix – 250 g
- Eggs – 2
- Sugar – 50 g
- Butter – 50 g
- Organic Lemon – 1
- Grappa (or Marsala) – 15 ml
- Water – 25 ml
- Baking powder – 1 teaspoon
- Seed oil for frying – to taste
- Powdered sugar – to taste
Preparation
How to prepare the gluten-free chiacchiere recipe
Break the eggs into a bowl, add the sugar , lemon zest (or vanilla if you prefer) and soft butter .
Also add the water and grappa (or Marsala) and start mixing, then add the flour and yeast . Knead first with a fork and then by hand on a pastry board to obtain a smooth and homogeneous dough. Let it rest covered in cling film for at least half an hour.
Divide the dough into 3-4 parts and, with the help of the pasta machine, roll them out one by one until they reach the thinnest thickness. Then use a serrated pasta cutter to create the chiacchiere by cutting rectangles and also making a cut in the centre.
Heat the seed oil in a pan until it reaches 170°C then fry the chiacchiere little by little until they are golden and crispy.
Drain them as soon as they are ready with a slotted spoon and pass them on absorbent paper before serving, finishing with a sprinkling of icing sugar .

Gluten-free chatter with the Thermomix
The process is very simple and can be put into practice with all Bimby models (TM5, TM6 and TM31). All you have to do is combine all the ingredients in the bowl and operate the robot in Spiga mode for 2 minutes . Once you have obtained a homogeneous mixture, work it quickly on a pastry board to form a dough and proceed as per the recipe. Don't leave out rest time.
Conservation
These Carnival chatter are excellent if enjoyed at the moment. You can also store them for a maximum of 2 days in a paper bread bag and in a cool, dry place.
