Gluten-free crêpes are a variant of the traditional dessert suitable for celiacs, easy to make and perfect to fill with the ingredients you like most.

Here are our delicious gluten-free crepes, an ideal version for celiacs, but suitable for everyone. In fact, the only ingredient that we must vary compared to the original preparation is the flour, therefore maintaining milk, eggs and butter. Today we opted to use rice flour , but if you want you can also use buckwheat flour as long as it is very fine.

Maybe you are also wondering if we are going to prepare savory crepes or if we will see how to make sweet ones instead. In reality, the dough we are going to make has a neutral taste, and therefore you can fill them however you prefer, from Nutella to creating delicious savory dishes, such as crepes with ham and cheese . But don't worry, after the preparation we will also see all the variations and advice !

How to make gluten-free crêpes with rice flour

  1. Break the eggs into a bowl and beat them with a pinch of salt . Add the milk and continue to beat with a fork or a whisk.
  2. At this point it's time for the flour : sift it and add it gradually so as to avoid the formation of any lumps.
  3. Once you have obtained a dense and consistent dough, let it rest for at least half an hour in the fridge.
  4. Once the necessary time has passed, cook the crepes with rice flour in a hot non-stick pan greased with butter. For a good result, just one ladle per portion will be enough to spread until you obtain a thin and uniform layer by simply rotating the pan or using the appropriate utensil.
  5. Turn it over as soon as the edges begin to lift, cooking for 1 minute on the other side too. As they are ready, stack them on a plate. Your gluten-free crepes are ready to be filled .

Gluten-free crêpes: variations

Nutella crepes

The crepes for celiacs that we have just prepared can also be made in a different way: we can use the Thermomix, remove the lactose, not use any type of flour and fill them with both savory and sweet ingredients. Let's see everything we can do… obviously always gluten-free!

Thermomix gluten-free crêpes

To prepare crepes with the Thermomix, follow these easy tips:

  1. Place eggs, salt and milk in the bowl and cook for 30 seconds. at speed 5.
  2. Add the sifted flour then operate the machine for 30 seconds. at speed 5
  3. Let the dough rest in the fridge for at least half an hour, and once it is ready, cook the crêpes in the pan!

Gluten-free savory crepes

As we said, the prepared dough is neutral and therefore lends itself to being filled with both sweet and savory ingredients. If you opt for the second, you just have to make sure that the products you choose are gluten-free: check especially with regards to cold cuts.

In any case, the secret we give you is to balance the tastes and textures! Use a soft cheese and pair it with cold cuts or smoked salmon , season with salt, oil and pepper and maybe even add a touch of acidity: rocket, cherry tomatoes, lemon peel… you just have to play with your imagination . Alternatively, the classic ricotta and spinach always make everyone agree.

Gluten-free sweet crepes

The same goes if you want sweet crepes. Make sure the ingredients you use are all gluten-free. Nutella, for example, is now " legally gluten free ", and is therefore perfectly fine.

Alternatively you can use fruit with yogurt, dried fruit butters or jam. Then make room for toppings of all kinds or more complex variations such as the delicious crêpes suzette .

Gluten and lactose free crêpes

For a light and lactose-free version, replace the butter with seed oil and as for the milk you can use any vegetable drink based on soy , rice or other. Our recipe for gluten and lactose free crêpes will explain everything in detail.

Conservation

The classic recipe and the variations of gluten-free crepes are best consumed at the moment. However, you can store them, unfilled, for a maximum of 1 day in the refrigerator, in a special food container. You can also freeze them in the freezer, just separate each crepe with a sheet of baking paper.
