By now you know that I am fighting a personal battle to allow even those who follow a gluten-free diet not to give up anything. So here's the idea of ​​preparing delicious and crunchy gluten-free onion rings. To do this I used flours obtained from gluten-free cereals such as chickpea and corn flour.

I don't know about you but I love fried onion rings. Many will probably turn up their noses, convinced that this authentic finger food is permeated by the strong smell of onion. On the contrary, battered and fried it loses its pungent flavour, giving way to an incredible sweetness . Let's find out together how to cook them with the gluten-free recipe.

Preparation

First, peel the onions , then cut into 1cm thick slices with a sharp knife.

Then detach the rings from each other, making sure they do not break, and transfer them to a bowl full of cold, lightly salted water . Leave them to soak for 30 minutes so that they lose their pungent flavour. This step is completely optional.

In the meantime, prepare the batter by mixing the sparkling water , rice flour , corn starch and a pinch of salt .

In a separate bowl, place the gluten-free breadcrumbs or cornflakes crumbled by hand.

After half an hour, quickly dry the onions, then holding them with tongs, pass them first in the batter and then in the breadcrumbs .

Fry them in abundant seed oil at 180°C until they are golden and crispy.

Serve with a squeeze of lemon or with homemade mayonnaise .

Conservation

Like any self-respecting fried food, it is best to consume it at the moment , when the onion rings are still hot and crunchy. In fact, as the hours pass, the fried food loses its exceptional consistency. We do not recommend freezing in the freezer .
