The quickest way to prepare shortcrust pastry is by using a mixer equipped with blades at the bottom (such as Bimby). Put the cold butter from the refrigerator together with the flour and blend until you obtain a mixture similar to wet sand.
Then add the salt and water slowly, always with the blades moving. You will notice that after a few moments a ball of dough will begin to form. At this point, stop the machine and transfer everything onto a lightly floured pastry board.
Work the gluten-free brisee quickly so as not to heat it, then wrap it in cling film and leave it to rest in the refrigerator for at least an hour.
Gluten-free pastry brisee is perfect for preparing delicious savory pies . To give it an extra boost of flavor you can flavor the dough with:
- fresh basil, but also parsley or other aromatic herbs chopped with a knife;
- powdered spices (curry, cumin, turmeric, pepper, etc.);
grated parmesan to give an extra touch of flavor. Replace 30 g of flour with the same weight of cheese.
