Ingredients
For gluten-free staples
- Cooked potatoes – 260 g
- Gluten-free flour for cakes – 460 g
- Eggs – 2
- Whole milk – 180 ml
- Water – 180 ml
- Granulated sugar – 100 g
- Butter – 50 g
- Fresh brewer's yeast – 25 g
- Organic lemon – 1
- Organic orange – 1
- Fine salt – 1 pinch
For frying
- Seed oil – to taste
To complete
- Granulated sugar – to taste
Preparation
How to prepare the recipe for gluten-free staples
Place the flour in a well in a bowl and in the center add the pureed potato , the warm milk in which you have dissolved the yeast and sugar , the water , the eggs and the grated citrus peel.
Start kneading and as soon as it takes consistency, add the butter at room temperature, little by little. Only lastly add the salt . Form a smooth and homogeneous dough (if you prefer you can also carry out all the kneading phases with a planetary mixer equipped with a hook).
Now roll out the dough with a rolling pin to a thickness of approximately 1 cm . Using a round pastry cutter 8 cm in diameter, cut out discs. Cut the center of each disk with a smaller pastry cutter to obtain donuts.
Place the donuts on a baking tray lined with baking paper and leave to rise covered for two hours in the oven with the light on and off.
Once the leavening time has passed, heat the seed oil in a pan. Fry the donuts in oil at 160°C-170°C a few at a time so that the temperature does not drop excessively. When they are golden and swollen, remove them and pass them on absorbent paper.
While they are still hot, roll them in granulated sugar .
If you want to vary and try cooking the staples in the oven, cook them at 200°C for 15 minutes after rising. Then brush them with milk and coat them in granulated sugar or dust them directly with icing sugar.

Conservation
Gluten-free fried staples last 1 day if stored in an airtight container. Before eating them, turn the oven on to 180°C and heat them for 5 minutes.
