How to prepare tuna and lemon pasta

  1. First we cook the pasta in plenty of salted water . Pay particular attention to the times indicated on the packaging because, especially in the case of gluten-free pasta, it is essential.
  2. In a pan, heat a drizzle of extra virgin olive oil (some use tuna preservation oil, but this is not recommended) and add the tuna , crushing it with a fork so as to break it up. Leave to flavor for a few minutes, then season with salt.
  3. In the meantime, finely chop the parsley . When the pasta is ready, drain it into the tuna pan and sauté for a minute.
  4. Season with grated lemon zest and chopped parsley. Finally, complete with freshly ground pepper, preferably white.

This pasta should be enjoyed at the moment , when the lemon still releases all its aroma and the pasta is hot and well mixed with the tuna. We therefore do not recommend storing it in the fridge or freezing it in the freezer.
