Golden, fried and crunchy mushrooms: there is no more delicious recipe!


Fried mushrooms

This is how to prepare breaded fried mushrooms, a recipe with few ingredients but very rich in flavour, ideal as a side dish or appetizer.

It is said that even the sole of a shoe is good when fried, yet it is not necessary to go that far. Take fried mushrooms for example: 3 ingredients and a few minutes will allow you to bring a tasty appetizer to the table which can alternatively be transformed into a side dish to your meat dishes.

For this recipe we fried champignon mushrooms, an economical variety available all year round. It goes without saying, however, that it is also possible to obtain the same result with varieties such as portobello and pleurotus or with the most prized porcini mushrooms . To get the most out of this recipe there are some key steps to follow. Let's see which ones together.

How to prepare the fried mushrooms recipe

  1. First, clean the mushrooms first with a small knife, removing the final part of the stem, usually earthy. Then clean your head with a cloth if necessary.
  2. If you have chosen small champignon mushrooms you can also leave them whole , otherwise we recommend cutting them in half so as to obtain uniform cooking.
  3. On a plate, beat the egg with a pinch of salt. Then distribute the flour and breadcrumbs between two others.
  4. Dip the mushrooms first in the flour , shaking them to remove the excess, then in the egg and finally in the breadcrumbs .
  5. At this point it's time to fry. Make sure the oil is at 170°C either by measuring it with the thermometer or by pressing a skewer toothpick on the bottom of the pan: at the right temperature, small bubbles will rise.
  6. Dip the mushrooms a few at a time (second important step) so as to prevent the temperature of the oil from dropping excessively and cook them for 3 minutes or until they are golden and crispy.
  7. Drain them with a slotted spoon and pass them on absorbent paper before serving.

The best way to enjoy fried mushrooms is with a squeeze of lemon juice and a pinch of salt and freshly ground pepper . Alternatively, accompany them with a homemade sauce. Our preference is the yogurt mayonnaise, full-bodied but more delicate than the classic recipe.

For a lighter side dish you can also cook the fried mushrooms in the oven . After breading, place them on a baking tray lined with baking paper and cook them at 180°C for 20 minutes .

Mushrooms fried in batter without eggs

In case of intolerances or to make the recipe 100% vegetal , you can prepare the mushrooms fried in batter. For this variant you will need:

  • 200 g of 00 flour
  • 150ml cold sparkling water
  • 100 g of breadcrumbs

Mix the flour and water with a whisk to obtain a smooth batter . Dip the mushrooms in it, after having cleaned them carefully, and then pass them in the breadcrumbs . Fry them in oil at 170°C for 3 minutes .

Conservation

As with all fried foods, even in the case of mushrooms it is advisable to consume them at the moment . Alternatively you can bread them and then freeze them . When you need them, simply dip them in seed oil and fry them until golden.
