Grapes in alcohol: the recipe for delicious preserves!
Grapes in alcohol are the perfect conclusion to your lunches with family or friends. Here is the recipe to prepare it.
There is a simple and quick way to preserve grapes : it is grapes in alcohol, a preserve to be prepared in September , when the grapes are in season, and to be enjoyed throughout the winter to warm the soul and experience good moments in company. The preparation of grapes in alcohol requires very few ingredients: white or black grapes with large berries, 95° food alcohol, water, sugar and flavorings to taste . Vanilla, cinnamon, cloves or the more exotic cardamom work well.
According to grandmother's recipe , the grapes in alcohol were prepared with alcohol and anise while the more modern versions only include alcohol. However, it is possible to prepare this grape-based preserve with a "different spirit" as in the case of grapes in grappa, with a stronger flavour, rum or vodka.
How to prepare the recipe for grapes in alcohol
- First, using scissors, remove the grapes, keeping a small piece of stem . This way it will be easier to enjoy. Choose grapes that are large and firm as well as free of imperfections.
- Then wash them under running water and dry them well with a clean cloth.
- Distribute the grapes in the sterilized jars so as to leave 2 cm from the edge . If you use different colored grapes the result will be even more beautiful to look at. At this stage also insert a piece of vanilla cut in half lengthwise (or other aromas to taste).
- Prepare the syrup by boiling the water and sugar until it thickens. It will take about 5 minutes but be careful not to burn it! Once cold, divide it into equal parts among the jars.
- Fill with alcohol so as to reach 1 cm from the edge and make sure it covers the grapes perfectly.
- Close with the lid and put in the pantry for at least 1 month (better 2) before consuming it. We advise you to shake the jar from time to time to prevent the grapes from sticking together.
Grapes in spirit are an excellent end to a meal to be enjoyed with coffee . Alternatively you can use it to enrich your desserts or serve it together with ice cream. It cannot be missed during the New Year's Eve dinner: it is considered a sign of good omen.
Alternatively, you can try your hand at preparing raisins in alcohol , an ingredient present at any time of the year and ideal for making a particular preserve.
