Gratin cauliflower
Gratin cauliflower is a delicious dish that will earn you applause from all your guests: here is the recipe with and without bechamel.
Baked cauliflower au gratin is a vegetable-based dish that will make even the most difficult to please children happy. In our recipe, in addition to cauliflower, there are bechamel and cheeses : a combination capable of conquering any palate!
We know: cauliflowers are the least loved vegetable in the whole garden, but this dish becomes a delicious and tasty side dish for the whole family. Ready to welcome the challenge ? Put on your aprons and let's get to work: let's go to the kitchen to prepare the recipe for cauliflower au gratin!
How to prepare the baked cauliflower gratin recipe
- Wash the cauliflower and cut it into florets then boil in plenty of salted water for 10 minutes. Drain them and let them cool.
- In the meantime, prepare the béchamel : pour the butter into a non-stick saucepan and let it melt. Add the sifted flour and cook until you obtain a sort of roux, stirring until golden.
- Without stopping stirring, slowly add the milk . After 10 minutes, season with salt and pepper and flavor with a pinch of nutmeg .
- Pour a thin layer of béchamel sauce onto the bottom of a baking dish suitable for cooking in the oven. Then place the cauliflower florets and cover them with the béchamel sauce (you can also mix everything together and then pour into the baking dish).
- Sprinkle with parmesan and breadcrumbs and bake in the oven at 200°C for 20 minutes or until a nice crust has formed.

An even tastier variant is cauliflower au gratin with ham and cheese : add small cubes of both of these ingredients, choosing a tasty string cheese such as mozzarella, scamorza or fontina. You won't regret it!
Gratin cauliflower without bechamel
After discovering all the secrets of the tastiest recipe, it's time to move on to a much lighter variant. We are talking about baked cauliflower au gratin with breadcrumbs and without bechamel. To prepare it you must, as in the previous preparation, clean the vegetables, divide them into florets and boil them or steam them for about 5-10 minutes .
Then place your cauliflower on a baking tray, season with salt and pepper and a drizzle of oil , and sprinkle the surface with breadcrumbs and your favorite spices. Bake at 180° C for about 20-25 minutes and then enjoy your light gratin cauliflower.
Similar and equally quick is the recipe for cauliflower gratin in the air fryer : you will see what a crunchy crust! Alternatively, again without bechamel, Sicilian cauliflower is excellent.
Conservation
Cauliflower with béchamel sauce can be stored in an airtight container in the fridge for about 3 days. If you want to reheat it, we recommend putting it in the oven for about ten minutes to preserve the crust .
