Gratin prawns

- Prawns – 12
- Breadcrumbs – 100 g
- Garlic – 1 clove
- Fresh parsley – 2 tufts
- Organic lemon – 1/2
- Extra virgin olive oil – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Preparation
How to prepare the gratin prawns recipe
First you need to clean the prawns . In this recipe we wanted to leave the head not only because that is where a lot of the flavor of the crustacean is concentrated but also because the finished dish is much more spectacular. In all cases, you will have to remove the legs, carapace and intestines.
Once the intestine has been removed, make the incision deeper so that there is space to accommodate the gratin.
In a blender, blend the breadcrumbs with the parsley , the cored garlic , a pinch of salt , a pinch of pepper and the lemon zest, removed with a potato peeler without affecting the white, with a bitter flavour. Then add the oil and mix again.
Using a teaspoon, fill the incision in the prawn with the breading and place it on a baking tray lined with baking paper. If desired, distribute the remaining mixture externally over all the prawns. Cook at 180°C for 15 minutes then serve piping hot.
For an even more aromatic version you can also add the zest of half an orange to the gratin or place the prawns, instead of directly on the baking paper, on slices of lemon or orange.

How to cook prawns au gratin in a pan
If you want you can also try cooking your gratin prawns in a pan. The result will be slightly different but still delicious.
- First clean the prawns leaving only the final part of the tail which will serve as a grip.
- In a bowl, create an emulsion with the oil, lemon juice, a pinch of salt and pepper and leave the prawns to marinate for 30 minutes .
- In the meantime, blend the bread with the garlic and parsley. Dip the prawns, barely dripping them in the breading , then cook them in a pan with a drizzle of oil for 2-3 minutes.
Conservation
The gratin prawns will keep in the refrigerator for a maximum of one day.
