Green bean pesto: it can be prepared in a few minutes and is super tasty!
Green bean pesto is a light and particularly tasty sauce that is well suited both as a condiment for a first course and to accompany meat or fish main courses and appetizers.
Preparing a good green bean pesto means being able to count on a simple sauce that can be made in a very short time. In short, it is a nice alternative for seasoning pasta but also for making tasty (and healthy) croutons .
Among quick sauces, it is in fact one of those that contains the fewest ingredients and which, for this reason, can be considered extremely genuine . In its simplicity, however, there are some tricks to keep in mind to obtain a pesto with green beans of a nice bright color. First, choose fresh green beans (frozen at most) and then… well, read the recipe to find out!
Preparing the green bean pesto recipe
- Start by cleaning the green beans to remove the ends .
- Take a large pot, fill it with water, add a pinch of salt and bring it to the boil.
- Cook the green beans for 15 minutes . They should be tender but not mushy and, once the time has passed, drain them and place them in a large enough bowl filled with ice water. This step serves to stop the cooking and fix the color.
- Drain them well then transfer them to the blender together with salt, grated cheese and peeled almonds and season everything with a drizzle of oil. Blend until you obtain a smooth cream.
Green bean pesto is excellent as an accompanying sauce , for making delicious bruschetta or for seasoning pasta . Try it by also adding green beans and diced potatoes cooked together with the pasta to bring a substantial and tasty dish to the table. Furthermore, you can add a clove of garlic without the soul if you like or replace the almonds with pine nuts or other dried fruit. For an even stronger flavour, use half parmesan and half pecorino. In short: there are no limits!

storage
This cream can be stored in the refrigerator for 2 or 3 days as long as it is well placed in an airtight container. To enjoy it to the fullest, it is advisable to take it out of the fridge at least 15 minutes before serving it and mix it carefully to brighten its colour. If it appears dry you can add a drizzle of oil before mixing it.
