Green tomato jam
Green tomato jam is a delicious and original jam, perfect for pairing with cheeses or for creating tasty appetizers.
Today we prepare a delicious green tomato jam. In fact, it often happens that at the end of the season the tomatoes are no longer able to ripen and remain green. So it is possible to transform them into a delicious green tomato jam, almost impossible to find on the market, but which should absolutely be tried at least once,
This green tomato jam is tasty, fresh and acidic , excellent for balancing savory and strong dishes, such as a nice platter of mature or semi-mature cheeses or for boiled meat , instead of the more classic mustard. What do you think, shall we get to work straight away?
How to make green tomato jam recipe
- First of all, take the tomatoes and wash them well under running water. Once done, dry them and remove the stalk, finally cut them into quarters and remove the seeds and internal white parts.
- Transfer the tomatoes into a bowl, add the sugar and lemon juice and mix well. Cover with cling film and leave to macerate in the refrigerator for at least 4 hours .
- Pour the contents of the bowl into a large pan, transfer it to the heat and cook over medium heat for an hour after boiling . Long cooking times are dictated by the absence of pectin in tomatoes: it is therefore necessary to thicken the jam on the heat during cooking. Remember to stir often to prevent it from sticking to the bottom.
- During cooking it is also important to remove the foam that forms on the surface: it contains air and when you store it, bacteria could develop.
- Blend everything with the immersion blender and after testing the saucer, transfer into sterilized jars . Close with a new lid, turn upside down and let the vacuum form. Once cold, make sure the lid no longer makes the characteristic click-clack and put it in the pantry.
For a less sweet taste you can reduce the sugar by up to 300 grams . You can also add a finger of grated fresh ginger to make the flavor of the tomato jam slightly spicy.

Conservation
Green tomato jam will keep in the pantry for a year . Once opened, it should be placed in the refrigerator and consumed within a couple of weeks.
