Grilled potato skewers
Perfect for a vegan barbecue, grilled potato skewers are simple to prepare and truly delicious. Serve them with homemade mayonnaise!
The arrival of good weather coincides with barbecues with friends , but often for those who follow a vegan diet this moment turns out to be tragic. Nobody ever knows what to put on the grill and it always ends up in moments of deep embarrassment. In reality, among the simplest vegan recipes there are grilled potato skewers which, accompanied by classic vegetable skewers , will delight your guests.
To prepare them, very few ingredients are needed and, if you like, you can also add aromas and spices . In this recipe we alternate potatoes with sliced onions to give the dish an extra boost of flavour: let's discover together how to prepare them!
How to prepare grilled potato skewers
For this dish we recommend using medium-sized potatoes , preferably organic, so that they can leave the peel. In this way you will prevent the potato from breaking during cooking.
- First, wash the potatoes well under running water, brushing the skin if necessary to remove any soil.
- Using a mandolin or a sharp knife, cut them into 3-4 mm thick slices and place them in a bowl filled with water. This operation serves to release the starch.
- Peel the onion , cut it into four and divide the various layers.
- After about 30 minutes, drain the potatoes and pat them dry with kitchen paper. Place them on a plate and season them with oil, salt and pepper . At this stage you can add chopped rosemary or paprika if you like.
- Skewer the potato slices, alternating them with onion slices in quantities of your choice, on a wooden toothpick that you have left to soak in water for at least an hour.
- Grilled potatoes cook in about 25 minutes , much depends on the fuel used and the temperature of the fire.
Serve the grilled potatoes with a vegan mayonnaise . For other vegan recipes, try tofu skewers !

We advise you to keep the potato skewers in the fridge, well covered, for about 3 days.
