Grilled radicchio is the true triumph of radicchio! If you love this vegetable, cooking it in this way will surely bring out all its characteristics, from its strong flavor to its bitter notes , excellent for pairing with meats, cheeses and even fish.

You can cook this radicchio together with other vegetables, use it for a single dish, as a side dish or even as an ingredient to fill a sandwich. In short, there are no limits to the imagination: let's get started !

How to prepare the grilled radicchio recipe

First of all, take your radicchio heads and make sure you clean them well . To do this, remove the final part and possibly the outermost layer of leaves, divide it into four without removing the leaves and rinse it thoroughly under running water. Once you have removed any residual soil, shake it well and dry it externally.

Heat a griddle or grill and, once hot, add the radicchio. Cook it for 1 minute on each side so that the outside becomes tender while the center remains crunchy.

Transfer it to a plate and prepare the emulsion. Finely chop the parsley and garlic and mix with oil , salt and pepper . Use everything to season the radicchio once it has cooled.

For a stronger flavour, enrich the emulsion with a spoonful of balsamic vinegar . Alternatively, we recommend trying it with our yogurt sauce or with walnuts and honey , a particular but perfect combination to enhance the taste of radicchio.

Grilled radicchio can be made with any variety of radicchio . We used the late one but the early one is also fine. If you don't like the bitter taste of the dish but still want to try your hand at the recipe, here's a trick: once cleaned, leave it to soak for a couple of hours in cold water.

We recommend consuming this simple vegetable side dish at the moment . We do not recommend freezing in the freezer.
