Grilled ribs
Preparing ribs on the grill isn't that difficult. Here are our tips for perfect cooking starting from marinating the meat.
The arrival of the beautiful season stirs in all of us the desire to dedicate ourselves to preparing barbecues and grills . Even those who usually don't lift a finger in the kitchen feel the call of charcoal and, as you can imagine, there is no respectable grilled meat without grilled ribs. However, if you have ever tried to cook them, you know very well how difficult it can be to keep the meat tender and that is why we come to your rescue with our advice.
The first step to truly delicious grilled pork ribs is marinating . By using wine or beer, the aromas of the drink will not only be released during cooking, but will allow you to keep the meat tender and succulent . How to marinate ribs
First, buy the whole rack of pork and not the already cut ribs.
- Remove the cartilage and any excess fat . Not everything though, because it will help keep the meat tender. You should also remove the whitish membrane that can be seen on one side of the whisker ( the pleura ), alternatively you can cut it with a knife with long diagonal cuts.
- Pour all the ingredients for marinating the pork ribs into a baking dish large enough to contain the meat: the wine , the whole garlic , the sliced shallots , the rosemary needles and the peppercorns .
- Place the meat and cover with cling film.
- Leave the ribs to marinate for a couple of hours , turning them halfway through.
How to cook ribs on the grill
A requirement to obtain excellent ribs is to cook at temperatures that are not too high for long times . It therefore goes without saying that barbecues with lids will allow you to better control these parameters.
- Once the marinating time has passed, it's time to light the fires. To cook ribs on the grill it is important to use indirect heat as cooking times are quite long. If you have a charcoal barbecue (or with briquettes) prepare it for indirect cooking, in the case of a gas one instead light two side burners away from where you will place the meat.
- It is then possible to position the ribs lying down , in the traditional way, or standing up , using the appropriate support. In this case, make sure that the fattest and meatiest part remains at the top so that the fat, dripping, keeps the meat tender.
- Approximately it will take 50-60 minutes at 170°C to obtain the correct cooking of the ribs.
The choice is yours whether to serve the ribs alone or together with some sauce: we recommend the very famous BBQ sauce , you won't regret it.

It is always better to consume freshly grilled meat because it tends to dry out over time. However, if you have leftovers, you can store it in the refrigerator for 2-3 days . The best way to reheat leftover ribs is to wrap them in foil and place them in the oven at 350°F for 20-30 minutes.
