- Guinea fowl pieces – 1
- Organic oranges – 2
- White wine – 1 glass
- Garlic – 1 clove
- Chili pepper (optional) – 1
- Rosemary – 1 sprig
- Extra virgin olive oil – to taste
- Salt – to taste
- Pepper – to taste
Preparation
How to prepare the orange guinea fowl recipe
For this recipe you can buy the guinea fowl already in pieces or whole and portion it yourself before cooking, dividing it into its parts. In all cases, make sure there are no feather residues left. Then rinse it under running water and dab it with kitchen paper.
In a pan, heat the oil with the garlic divided in half. If you like, you can also add a chilli pepper which goes well with both the meat and the orange. Brown the guinea fowl first on the skin side and then on the other then add the white wine .
When you no longer smell alcohol, add salt , pepper , rosemary and grated orange zest , put the lid on and cook over medium-low heat for 45 minutes , stirring occasionally. If the bottom dries out excessively you can add broth a little at a time.
At this point the cooking juices should be quite small because it's time to add the orange juice . Let it caramelize for 5 minutes then serve your guinea fowl piping hot.

In our recipe we use zest to give the guinea fowl an intense flavour. If you prefer to keep the orange flavor more delicate then omit the zest, adding only 3-4 slices of another orange when blended with the juice.

Conservation
