Hazelnut butter

With only toasted hazelnuts it is possible to prepare a delicious and perfect dried fruit butter for breakfast.

Hazelnut butter is one of the many nut butters that can be made at home. Although it is possible to find it on the market, a version produced at home allows us to have full control of the raw materials, namely hazelnuts. For a 100% natural butter we have not added sugar or salt but we will still leave you some indications on the matter.

Homemade hazelnut butter is excellent for breakfast , spread on bread or to enrich porridge and yogurt. It is prepared with toasted hazelnuts and contains all the properties of the fruit, making it rich in vitamins (E, B6) and mineral salts (magnesium, iron, calcium and zinc), as well as fibre , proteins and monounsaturated fats (the "good" ones).

How to make hazelnut butter recipe

First, remove the shell from the natural hazelnuts . Leave the skin that we will remove in the next step.

Spread them out on a baking tray lined with baking paper and toast them at 180°C fan assisted for 15 minutes . While they are still hot, transfer them to a cloth, fold it in half and rub vigorously with your hands to remove the cuticles .

Transfer the cleaned hazelnuts into the mixer bowl. Warning: it will have to be quite powerful to obtain smooth and homogeneous butter. Conversely, it may remain slightly grainy but no less good or unsuitable for consumption. Blend, gradually increasing the power until you first obtain a floury mixture and then, gradually, more and more fluid. You will have to be patient because depending on the power of the robot it could take up to 10 minutes .

Once ready, transfer the hazelnut butter into a glass jar.

If blending the butter and making it smooth and creamy proves too difficult for your food processor, help it by adding 10-20 g of seed oil . Do not add water or milk because it would compromise the shelf life of the butter.

If you want, you can also add sugar (2 tablespoons), maple or rice syrup (always 2 tablespoons) or a pinch of salt . Green light also for spices (with cinnamon it's delicious) or cocoa (1-2 teaspoons maximum) added only when you already have the creamed butter.

Since you need a very powerful blender, if you have the Thermomix (any model is fine whether it is the TM5, TM6 or TM31) we recommend using it. First, however, always toast the hazelnuts in a fan oven at 180°C for 15 minutes.

Using a cloth, rub the hazelnuts to remove the skin and transfer them to the bowl. Blend first for 30 seconds. at speed 6 , then spatula on the bottom and repeat the step.

Increase the speed to 8 and continue blending, stopping occasionally to stir, until you obtain a smooth butter.

Conservation

Hazelnut butter can be stored in the refrigerator for up to 2 months . While there it could split, depositing a solid part at the bottom and forming a layer of oil on the surface. In this case it will be sufficient to mix it well before using it.
