How to make homemade buttermilk

  1. To prepare the buttermilk, pour the fresh liquid cream, also very cold, into a glass bowl, preferably cooled first.
  2. With an electric mixer, whip the cream . Continue for about a quarter of an hour or more, until the cream begins to disassemble, i.e. the separation of the liquid from the solid, i.e. from the fats, has begun.
  3. The fat part will become butter, which you can save and use for your recipes. The liquid part will be the buttermilk.
  4. All you have to do is filter everything with a sieve, so that it separates perfectly without lumps of fat (butter). Place it in an airtight glass container and keep it in the fridge before using it for your recipes.

How to replace buttermilk

There is also another way to prepare a "fake" buttermilk with yogurt. The ingredients are:

  • 70 g of low-fat yogurt without sugar
  • 70 g of skimmed milk
  • 1 teaspoon lemon juice

Combine the low-fat yogurt, the skimmed milk and a teaspoon of lemon juice in a bowl. Mix and let rest for about ten minutes at room temperature. At this point it is ready to be used in recipes: although prepared in an alternative way to the original, the result is truly amazing.
