How to make homemade chestnut jam

  1. Take the chestnuts and soak them for about 30 minutes in a bowl with water.
  2. Subsequently, with a sharp knife, cut them in the central part without affecting the pulp, cover them with water, add 1 tablespoon of coarse salt and boil them for about 30 minutes.
  3. Once the chestnuts are ready, drain them and let them dry, then peel them and remove the skin.
  4. Blend them with a blender or pass them through a vegetable mill.
  5. Now we must proceed with a second cooking , to give our jam the right consistency. Put the water and sugar in a pan, turn on the heat and let the sugar melt.
  6. Then add the blended chestnut paste and mix well, leaving to cook for about 10-15 minutes .
  7. When it has obtained the desired consistency, turn off the heat and pour the jam into special sterilized jars .
  8. Close them and turn them upside down until the contents have cooled, so as to create a vacuum .

You can also reverse the steps: break the boiled and peeled chestnuts and put them to boil with water and sugar for about 10-15 minutes , when they are nice and soft, blend everything and put them in jars just as they prepare them in this video recipe :

Conservation

Store the jars in a cool, dry place, away from sources of light or heat, for approximately 3-4 months (only if the vacuum has been created correctly). Once opened, keep the jar in the fridge and consume it within about 1 week .
