How to prepare the green tagliatelle recipe

  1. First clean the spinach leaves and remove the hardest part of the stem.
  2. Brown them in a pan with a lid without adding seasoning, then drain them perfectly, squeezing them with your hands as soon as they have cooled.
  3. Blend them carefully until creamy (you shouldn't need to add water as, in any case, there is likely to be some left over from cooking).
  4. Now take a large bowl and put the flour inside, make a well and break the eggs in the center, also adding the spinach cream .
  5. Incorporate the flour little by little with a fork , beating the eggs just like when making an omelette. As soon as the dough takes consistency, finish working it on the pastry board for 15 minutes .
  6. When you have obtained a compact dough, wrap it in cling film and let it rest for at least 30 minutes .
  7. After the rest time , roll out the dough with the help of a rolling pin or with the pasta machine . In this case, push yourself to the last shot.
  8. Let the pastry dry for a few minutes, roll up and cut the tagliatelle.
  9. Place them gradually on a floured surface and leave to dry before cooking and seasoning to taste.

How to season green tagliatelle

The seasoning for green tagliatelle is not at all difficult to choose. In fact, even though there is spinach in the dough, the taste will be very subtle and easily combined with many ingredients, first of all cream and earthy flavours. For this reason we advise you to try them following the classic recipe for tagliatelle with mushrooms or, to go truly classic, with an excellent Bolognese sauce prepared to perfection. Also excellent with the classic and slightly 80s style, cream and salmon .

Conservation

We recommend consuming cooked tagliatelle at the moment, while raw they can be stored in the fridge for a maximum of 2-3 days under a clean cloth. When raw you can always freeze it already portioned in the freezer.
