How to prepare jellied meat recipe

  1. First, combine the meat (preferably a part of the muscle) and the vegetables in a sufficiently large pan. Cut them into not too small pieces because they will have to cook for a long time and remove the excess fat from the meat.
  2. Add two pinches of salt, cover with water and cook for about 2 and a half hours , then turn off the heat and leave to cool.
  3. At this point, recover the meat which must be very tender and shred it with your hands . Transfer it to a bowl and season with lemon juice, freshly ground pepper and more salt if needed.
  4. Filter the broth through a fine-mesh strainer lined with a clean cloth (at least twice ) and set aside.
  5. Soak the isinglass in cold water then dissolve it in the broth before adding everything to the meat and placing it in a large mold or single-portion moulds.
  6. Leave to harden in the refrigerator for at least 3-4 hours before turning the jellied meat out of the mold.
  7. Once ready, some white fat accumulations may have formed on the surface, which we recommend removing delicately with a fork.
  8. To unmold it is very simple, immerse the container in a pan of hot water for a few seconds, you will see that the jelly will come off in an instant and without effort.
