How to prepare the recipe for homemade peeled tomatoes

  1. Start by sterilizing empty glass jars by boiling them in water with their caps for 20 minutes .
  2. Drain them with tongs and leave them to cool upside down on a clean cloth. When it's time to fill them with tomatoes they must be perfectly dry so our advice is to carry out this operation the day before . Alternatively you can put jars and caps in the oven at 120°C for 10 minutes .
  3. Now focus on the tomatoes . Remove the stem and wash them carefully under running water. Choose the most beautiful tomatoes, those with intact skin and no marks or bruises.
  4. Score them at the base with an X-shaped cut , trying not to damage the pulp but only the skin.
  5. Bring a large pot full of water to the boil and immerse the tomatoes for 2-3 minutes .
  6. Drain them with a slotted spoon and let them cool on the work surface before proceeding with removing the skin . All you need to do is use a small knife to get perfectly peeled tomatoes.
  7. As they are ready, transfer them into sterilized jars , pressing a little with your hands . Fill them until there is 2 cm left from the edge.
  8. Close them with a new cap, put them in a pan and cover them with at least an inch of water. To make sure they don't break when hitting each other, wrap them in clean cloths.
  9. Boil for 30 minutes (calculated from the boiling point) and let them cool completely in the water until the next day when you dry them and put them in the pantry. But first make sure that the vacuum has formed by pressing the lid: you will no longer have to hear the characteristic click-clack.

The choice is yours whether to add, directly into the jar with the tomatoes, a little coarse salt and a few basil leaves as seen in this video . We prefer to keep them natural and possibly flavor them when using them.
