Strawberry jam

How to make homemade strawberry jam

  1. First, wash the strawberries, remove the green stalks and cut them into chunks . Squeeze some lemon juice and prepare the sugar.
  2. Place the strawberries in a bowl and let them macerate, adding the filtered lemon juice, lemon peel and sugar. Leave to rest in the fridge for at least 10-12 hours for a better result
  3. Once the necessary time has passed you will see that the strawberries will have thickened. The lemon not only helps oxidation but will allow the mixture to become denser and the strawberry to maintain its color.
  4. Pour everything into a large pan, mix well and place the pan on the heat.
  5. Cook over medium-high heat until boiling. At this point, close the lid and cook for another 20 minutes over medium-low heat . Before turning off the heat and transferring the homemade jam into the jars, do the classic saucer test : place a teaspoon of jam on a cold saucer and tilt it. If the mixture doesn't drain quickly, it's ready .
  6. Transfer the jam into a carefully sterilized glass jar, close with the lid and turn upside down. Let cool completely before enjoying.

Storing strawberry jam

Once decanted into jars, leave it in the pantry for at least 2/3 weeks before eating it. Store it for up to 4 months and, once opened, keep it in the fridge for up to a week.

You can also close the jars and then cook them in a bain-marie for about 20 minutes: in this way you can keep the jars in your pantries for up to a year.
