Cooking octopus and keeping it soft has never been so easy: here is our guide to preparing octopus in a pressure cooker!

The pressure cooker is one of those kitchen accessories that you either love or hate, there is no middle ground. It's difficult to do without it once you discover how easy and quick it is to use, especially for all those preparations that require long cooking . In fact, not everyone knows that it is possible to prepare octopus in a pressure cooker in less than half an hour while keeping the meat tender and tasty.

Leave behind the old cork which, according to some, should be added to the water and all the superstitious gestures that usually accompany recipes with octopus. To obtain tender octopus in less than 30 minutes, all you need to do is dust off your pressure cooker!

Ingredients

For the pressure cooker octopus

  • Octopus – 1 kg
  • Juniper – 3 berries
  • Pepper – 3 grains
  • Laurel – 2 leaves
  • Carrot – 1
  • Celery – 1 stalk
  • Onion – 1/4
  • Salt – 1 tsp

Preparation

How to prepare the octopus recipe in a pressure cooker

First clean the octopus by emptying the bag and removing the eye and beak. Then rinse it under running water and set aside.

Bring half a liter of water to the boil in a pressure cooker. Then add the juniper berries, the bay leaf and the peeled and chopped vegetables . These ingredients are not essential but they give the octopus an excellent flavour. In all cases do not add salt.

Dip the octopus tentacles, holding it by the head, three times so that they curl and obtain a nice effect. This step is completely optional.

Close the pressure cooker with its lid and start cooking the octopus, calculating 18 minutes from the whistle . Once the cooking time has elapsed, turn off the heat and let the pan cool completely before opening it.

Add the salt and let the octopus cool in its water for at least 10 minutes. By rinsing it under running water you can then remove the skin.

In a similar way you can cook frozen octopus in a pressure cooker, whether you let it defrost in the refrigerator or use it still frozen, this is because the times are always calculated starting from the whistle.

Conservation

Octopus eaten freshly cooked is incomparable but you can keep it in the fridge in a tightly closed container for about 3 days. If the product is not initially frozen you can also place it in the freezer for approximately 3 months.
