How to impress at the table in a flash? With the recipe for our rice omelette!


Rice omelette

The rice omelette is an original idea for a single dish with many flavours, by bringing it to the table you will certainly make an impression and hit the target.

The rice omelette is a surprise on the table. Usually the pasta version is better known, but this version, rich in flavours, is also tasty and appetising. In our recipe we start from leftover risotto, a recovery proposal which, in addition to avoiding waste, is also delicious ! However, our preparation is also excellent in another version: just boil the rice you prefer and add it to the rest of the ingredients! Less tasty but just as satisfying… and you can also enrich it with a few cubes of cheese!

  1. Place the leftover rice in a bowl and add the eggs, grated cheese, a pinch of salt and pepper.
  2. Mix with a fork until the mixture is smooth.
  3. At this point take a non-stick pan and oil it with extra virgin olive oil.
  4. Turn on the low heat and start distributing the mixture into the pan, using a spoon.
  5. Level the surface well, put the lid on and leave for about 10-15 minutes .
  6. Using the lid, turn the omelette and let the other side cook for the same amount of time.
  7. When it is ready, place it on a serving plate, complete with a little chopped fresh parsley and serve.

This risotto omelette will conquer everyone, we used rice with sauce from the day before, but you can try to indulge yourself with other preparations and then tell us how you liked it!

Variations and tips for the rice omelette recipe

Our omelette with leftover rice can very well be prepared in a different way, and here are some examples.

First of all, as we said previously, if you don't have any leftover rice you can boil the same amount listed in the ingredients in boiling water. Let it cook for the time indicated on the package, then drain it and let it cool before continuing with the classic preparation .

Let's move on to some advice on the filling : you can in fact enrich your omelette with whatever you prefer, be it cubes of ham, or mozzarella or provola. All you need to do is mix them well into the dough and the result is guaranteed.

Finally we move on to a cooking variant. Have you ever tried to prepare baked rice omelette? To do this we recommend starting to preheat the oven to 190° C. Take a cake tin or a round baking dish of approximately 22 cm in diameter and cover it with baking paper. Pour the rice mixture inside, level it well and leave it to cook in the oven for about 30-35 minutes . For the last 2-3 minutes you can put the grill mode on to quickly form that delicious crunchy crust (but be careful not to burn the omelette, it would be a real shame!).

Conservation

However you decide to cook the rice omelette, the advice is to keep it in the fridge for a maximum of 2-3 days , well covered in cling film or foil. We do not recommend freezing in the freezer.
