Blackberry jam is a very simple jam to prepare, perfect for those who want to enjoy these fruits, which reach full ripeness in the summer, even during winter. The jam prepared following this recipe is perfect for filling tarts, cakes, sweet rolls or biscuits .

Since blackberries are naturally rich in seeds, to make the jam smooth and homogeneous, we will pass everything through a food mill. But if it seems excessive to you, or you want a preserve with a rustic flavour, skip this step.

How to make seedless blackberry jam recipe

  1. To prepare the jam, start by rinsing the blackberries thoroughly under cold water and removing the stem.
  2. Transfer them to a steel pan together with the sugar, juice and lemon zest and mix. Cover with a lid and leave to macerate for at least a couple of hours (ideally overnight in the fridge).
  3. The following day, put on the heat and cook for about an hour , stirring occasionally and removing the foam when it forms. Adjust the heat so that the jam just simmers.
  4. At this point, pass everything through a food mill and filter through a fine mesh strainer to make sure you remove all the seeds. Proceed with the saucer test to make sure that, once cold, the jam has the right consistency.
  5. Put the mixture back in the pan and keep it boiling while you transfer it to the sterilized jars . Close with the lid and leave to cool upside down to obtain a vacuum.
  6. Store the jars in a dry and cool place after attaching the label with the date and contents.

You can prepare the blackberry jam without sugar if you wish, replacing the latter with two ripe apples. Furthermore, to remove the seeds you can also pass the fruits in a centrifuge or extractor before cooking them by placing the liquid obtained together with sugar and lemon in the pan.

storage

Blackberry jam will keep in the pantry for a year. Once opened it should be placed in the fridge and consumed within a couple of weeks.
