How to make fried courgettes
Crispy fried courgettes are a delicious and easy-to-make finger food, perfect to serve as a side dish or during an aperitif at home.
Today we are preparing some amazing fried courgettes, golden, crunchy and easy to make, a way to bring an appetizing side dish full of flavor and very tasty to the table. There are many ways to prepare this dish, and today we will see the two "basic" breadings (with flour or breadcrumbs) and a more complex variant, where we will make a batter.

How to make breaded and fried courgettes
- Start by washing the courgettes, then dry them and cut them. You can choose whether to make washers, strips or give it the classic stick shape. However, try not to make the pieces too thick , so as to facilitate cooking the vegetables.
- At this point you can decide whether to proceed immediately to cooking or to purge them of the vegetation liquid: in the second case, place the chips or matchstick courgettes in a sieve inside a bowl, sprinkle them with coarse salt, place a weight on top and let them purge from 15-30 minutes up to even 1-2 hours .
- Once the time has passed, remove the water, rinse them and they are ready for cooking.
- Dredge the courgettes in the flour.
- Immerse them a few at a time in a deep pan with boiling oil and let them become golden and crunchy (it will take about 4-5 minutes), finally dry them with kitchen paper and add salt. Enjoy your meal!

This recipe for fried courgettes, known as Roman style, is the most used thanks to the fact that it leaves the taste of the vegetables practically unchanged . However, there are other ways to prepare them.
The variant with breadcrumbs or eggs
Instead of flour, you can also use breadcrumbs for an even crunchier result and dip them in 1 beaten egg.
In this case we also recommend flavoring the bread with herbs and spices . Try a mix with pecorino, pepper and fresh parsley. Using mint might be a good idea too!
Courgettes fried in batter
A delicious variant of this dish is battered courgettes. To make it, use 60 g of 00 flour, 40 cl of light beer, 3 courgettes, a pinch of salt and frying oil.
- Clean the vegetables, then continue preparing the batter for fried courgettes.
- Sift the flour into a large bowl, add the light beer a little at a time and mix with the help of a whisk to prevent lumps from forming (if the batter is too thick you can dilute it by adding more beer).
- Salt lightly then cover with cling film and leave to rest in the fridge for 30 minutes.
- Once the resting time has elapsed, take the vegetable batter out of the refrigerator, then pour the frying oil into a large pan.
- Let it heat up and start dipping the courgettes in the batter. Fry them in hot oil, making sure they do not overlap.
- Brown well, then lift the vegetables with a slotted spoon, drain them well and place them on a plate lined with absorbent paper. Continue in this way until you have used all the ingredients at your disposal.
- Salt the fried courgettes and serve; they are excellent with the addition of sauces to taste.

Fried courgettes are a savory treat that you can treat yourself to once in a while, as you surely know, this preparation is fantastic if served at the table as soon as the courgettes are ready and still hot and crunchy . We do not recommend storing them as, as the hours pass, they will inevitably lose their crunchiness, becoming soft and much less inviting.
