A tasty snack that everyone will like? You can prepare it easily and customize it as you wish: here's how to make a fresh and delicious ice cream biscuit at home.

The ice cream biscuit is almost obligatory in the summer when the beautiful days invite us to enjoy fresh snacks . You can also prepare this recipe at home, with simple ingredients and this will also allow you to customize the individual biscuits as you prefer.

All you have to do is prepare the bases with simple shortcrust pastry. For the filling, then, you can indulge yourself.

If your child loves strawberries, you can put them in the filling, if instead the partner is a chocolate glutton, fill him with drops. If, on the other hand, you want a cocoa biscuit, just add 30 grams of bitter cocoa to these doses. Not to mention the thousand other possible variations ! No more preambles: let's see together the recipe for the homemade ice cream biscuit!

Preparation of homemade ice cream biscuit

  1. To start, prepare the pastry by mixing the flour with the cold butter cut into pieces, the egg and the yolk, the sugar, 1 pinch of salt and baking powder.
  2. Leave to rest for half an hour in the fridge .
  3. Roll out the pastry, cut out the biscuits to the preferred size and then bake on a baking tray lined with baking paper for around 10-15 minutes at 180°C .
  4. Once the biscuits are cooked, set them aside to cool down and prepare your ice cream filling (crafty).
  5. Whip the already sweetened cream with an electric whisk, then add the remaining eggs and continue beating until the mixture is firm and homogeneous. Alternatively, take your favorite flavored ice cream out of the freezer to soften.
  6. You can leave it with a neutral milk taste or enrich it with other ingredients: such as cocoa powder, chocolate chips or pureed fruit. Just remember to keep whipping everything well with an electric whisk until you have a firm cream.
  7. When the biscuits are completely cold, fill them.
  8. Overlap them to form a sandwich and place in the freezer until ready to consume (for at least 4 hours). If you make ice cream cookies with chocolate chips, don't just insert them in the filling, but roll the edges of the cookie in the chocolate chips before putting them in the freezer.

If you don't want to use eggs to prepare this summer dessert, you can also opt for the use of condensed milk:

  1. Whip the sweetened cream well in the same doses as in the basic recipe.
  2. Once ready, add about 400 g of condensed milk to the cream, stirring gently from bottom to top with a spoon or spatula so as not to disassemble the cream.
  3. Then continue with the basic recipe and enrich the taste of your crafty gelato as you please.

These quick and easy treats can be easily stored in the freezer for up to 2 weeks (for biscuits with ice cream made with eggs) or up to 1 month (for biscuits with ice cream made with condensed milk).
