To prepare the sauce or a preserve we sometimes find ourselves having to peel large quantities of tomatoes in a very short time. Many people hate doing it: it becomes a very confusing , dirty and… urticating process. Is it possible to peel them quickly? Of course: in this guide we explain how to peel tomatoes in the simplest and fastest way possible.
You will need – in addition, obviously, to the tomatoes – a knife, boiling water and a basin with ice .
How to peel tomatoes?
- For the first step, you need to arm yourself with a knife and eliminate the green stem , taking care to lightly cut the lower part of the tomato with a cross.
- At this point, immerse them in boiling water for a maximum of 30 seconds.
- Using a slotted spoon, drain the tomatoes and place them immediately in a bowl with ice . This way you will stop the cooking and cool the tomatoes very quickly.
- Once cool, with your hands, pull the skin of the tomatoes starting from the center of the incision and peel them.
How does it work? The skin of the fruit, in contact with the hot water, relaxes, and then expands again thanks to the ice: it's all a question of reaction. It is important, however, to peel them immediately after searing them, otherwise the skin will become tough again. Once peeled you can use them to make an excellent concassé and therefore bruschetta or transform them into peeled tomatoes.
How to peel tomatoes: 3 alternative methods
– If you have more time , however, you can try another method. After removing the stems and cutting the bottom part, immerse the tomatoes in olive oil for about three hours . The underlying principle is similar to the one already illustrated: the peel will become softer and will be very easy to remove with your fingers. The important thing is that the tomatoes are completely immersed in the oil.
– The third and final method that you can try is the one with the help of the microwave oven . Take your tomatoes (cut and without stems) and brush them with oil before placing them in the microwave for 20 seconds at maximum power. The time varies depending on the type of oven you have: it may take up to 5 minutes.
– There is also a way to peel tomatoes without blanching them or using oil. Get a small knife with a smooth blade, like a paring knife, and pass it all over the skin as seen in this video . Then lift a flap with the tip and peel. Easy right?
Finally, a piece of advice : if you have to peel a lot of tomatoes, divide them into two tranches (or even three) so that they are easier to manage. At this point you are ready to make an excellent tomato sauce!
