How to prepare courgette flower fritters?

When spring arrives and therefore also courgette flowers, it's really impossible to resist. Cooking pancakes with courgette flowers is a moment of celebration every time. It seems incredible how combining such simple ingredients you can give life to a delicious appetizer loved by all. Yes, because basically to prepare these pancakes all you need is flour, a pinch of yeast and beer (or carbonated water). This is a typical preparation from Campania: fried sciurilli , the dialect name for courgette flowers, is a must for those who love fried food.
The choice is yours whether to accompany the courgette flower pancake with a squeeze of lemon and a green salad, or with yoghurt sauce!
How to prepare pancakes with courgette flowers
- Clean the courgette flowers first by removing the central pistil which would give the dish a bitter taste, then the stem.
- In a bowl, put the flour and the egg, then slowly add the very cold water (also carbonated if you want) in which you have already dissolved the yeast . Mix well with a whisk to obtain a smooth and fluid batter.
- Take the courgette flowers and add them to the batter (you can leave them whole or cut them roughly). Mix everything quickly, cover the bowl with plastic wrap and let it rise for about 2 hours.
- In a large frying pan, preferably an iron one, heat plenty of seed oil for frying.
- Using two spoons , drop small portions of dough into the hot oil. You will notice that in a short time they will tend to swell. Turn them occasionally in order to obtain a uniform browning , then drain them with a slotted spoon on absorbent paper, in order to remove the excess grease.
- Proceed with the rest of the courgette flower batter, without putting too many fritters at a time to prevent the oil temperature from lowering.
- Once the mixture is finished, serve quickly at the table.
Serve hot , freshly made with a pinch of salt and, if desired, a squeeze of lemon.

Advice
To make the batter more appetizing, you can also add some Parmesan to the flour or, if you prefer a more decisive taste, even some pecorino. Alternatively, they also give an extra touch of aromatic herbs.
For a batter that is also suitable for a vegan diet , however, omit the egg and use very cold carbonated water.
You can also enrich the batter with a little cold beer from the fridge , if the final result is not smooth, fluid and homogeneous you can add more flour .

It is advisable to consume this dish immediately , otherwise it would lose its taste and fragrance.
