How to preserve asparagus in oil
The recipe for asparagus in oil is really simple and allows you to preserve the flavor of this spring vegetable all year round.

Asparagus in oil: how to make them
- First, wash the asparagus thoroughly under running water then remove the final part of the stem, which is too woody to be consumed.
- Fill a pot with water and vinegar and as soon as it reaches a boil, add the asparagus. Cook them for about ten minutes, considering that they must remain al dente.
- Then drain them with a slotted spoon and spread them out on a clean cloth.
- Cut them into pieces of the size you prefer and transfer them to sterilized glass jars . If you like, you can add flavorings such as minced garlic, chilli or parsley.
- Cover with oil and close, keeping the jars in sight for a day. After this period of time, top up the oil if necessary.
Preparing wild asparagus in oil is just as simple. The only precaution to use is to halve the cooking times in order to keep them al dente. If, on the other hand, you prefer to prepare the wild asparagus in vinegar once blanched, transfer them to glass jars and cover them with very cold water and vinegar, previously boiled with pepper and bay leaf. After a rest period of 20 days , the asparagus in oil can be kept in the pantry for over 6 months . Once opened instead, put them in the refrigerator.
